As my mentorship students know, gluten free and dairy free recipes are helpful to achieve a balanced healthy lifestyle. Those in my programs (including myself) have found that very energy sensitive people feel better after avoiding gluten and dairy.
Being gluten free doesn’t mean that we can’t enjoy out favourites, with a healthier twist on them. Check out my gluten and dairy free recipe for pancakes using buckwheat.
**note: you can add sprinkles and make them birthday cake flavour by adding a touch more of vanilla and grate in some lemon rind. Your gluten free Kiddos will LOVE them for a birthday treat.
Buckwheat pancakes 1 cup buckwheat flour 1 tbsp coconut sugar 1 1/2 tsp baking powder 1 tsp baking soda 1/4 tsp Himalayan salt 1 1/4 cup almond milk 1/2 tbsp Apple cider vinegar 1 egg 1 tsp vanilla Blend the dry ingredients. Mix apple cider vinegar into almond milk, and add to dry mixture. Add the vanilla and egg. Mix with a whisk until smooth. Cook on medium low skillet. I used avocado oil in my pan. Enjoy!
